zucchini breadZuchini Bread

3 1/4 cups all-purpose flour
1 1/2 teaspoons salt
1 teaspoon ground nutmeg
2 teaspoons baking soda
1 teaspoon ground cinnamon
3 cups sugar
1 cup vegetable oil
4 eggs, beaten
1/3 cup water
2 cups grated zuchini
1 teaspoon lemon juice
1 cup chopped walnuts, pecans or almonds

Preheat oven to 180 degrees C. In a large bowl, combine all dry ingredients except nuts. In a seperate bowl, combine wet ingredients. Mix wet ingredients into dry, add nuts and fold in. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean.

2 large oranges
200g caster sugar
200g ground almonds
½ tsp baking powder
6 eggs
½ lemon, juice only

Put the whole oranges in a pan and cover with cold water. Bring to the boil, turn down the heat and simmer for up to two hours. Check the water to ensure they don't boil dry. After two hours, remove from the heat and leave to cool.
Preheat the oven to 200C. Remove the oranges from the water. Cut in half and remove the pips. Place them in a food processor, skin and all, with all of the remaining ingredients and blend until mixed. Put the mixture into a greased and lined cake tin (20cm/8in) and bake for 45 minutes.
Let the cake cool. Serve with fresh cream and some mandarin segments

1 cup cooked brown rice, (takes about 1/2 hour)
1/2 cup chopped walnuts
1 diced red pepper
1 cup shallots or spring onions
1 chopped apple
1 cup chopped celery
1/4 cup chopped almonds
1/2 cup sultanas

Mix all ingredients together and dress with
2 tablespoons olive oil combined with 2 tablespoons vinegar, 1tsp brown sugar + 1tsp curry powder

2 cups cooked chickpeas
2 eggs
3/4 cup grated tasty cheese
1/2 cup finely chopped almonds or pecans
1/2 cup fresh breadcrumbs
1/2 cup grated carrot
1 finely chopped onion
Salt, pepper & garlic, to taste
1 tablespoon soy sauce
1 tablespoon oil
1/2 tsp curry powder

In a food processor, combine chickpeas and eggs and process until pureed. Turn out the puree into a bowl and stir in the rest of the ingredients. Chill covered for 2-3 hours.

Form the mixture into patties shapes and fry turning once or as few times as possible.
